Backstabs in Dark Souls 1 are what parries are in Dark Souls 3. They rarely work against good players, but they take very little effort to be succesful with against newbies and are thus used as a crutch by mediocre players to shit on bad players. Backstabs in Demon's Souls PvP actually were different than in Dark Souls PvP. In Demon's Souls you cancelled backstab damage by rolling and could reduce the damage by blocking. In Dark Souls you cancelled backstab damage by hitting the other player before being backstabbed on your screen, but after they landed the backstab on their own screen.

Don't get me wrong, I love my adaptability back steps in Dark Souls II. I'm just not certain how balanced it is to have iframes connected to a stat. I still use the back step in DS3, but only very situationally and with certain weapons. CGSs actually do very well with the DS3 back step and I'm sure katanas would do well with one too.
